Classic Pancakes

- 1In a large bowl, sift together the flour, baking powder, salt and sugar.
- 2Make a well in the center and pour in the milk, egg, melted butter and vanilla; mix until smooth.
- 3Heat a lightly oiled griddle or frying pan over medium-high heat.
- 4Pour the batter onto the griddle, using approximately 1/4 cup for each pancake.
- 5Cook until bubbles form and the edges are dry, then flip and cook until browned on the other side.
- 6Serve hot with maple syrup and fresh fruit.
