Sheet Pan Sausage with Peppers and Onions

- 1Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- 2Place sliced bell peppers and onions on the sheet pan. Drizzle with olive oil and season with oregano, garlic powder, salt, and pepper. Toss to coat.
- 3Add sausages to the pan, nestling them between the vegetables.
- 4Roast for 25–30 minutes, flipping sausages halfway through, until sausages are browned and cooked through, and vegetables are tender.
- 5Garnish with fresh parsley if desired and serve hot.
